Zucchini Pizza Bites

Healthy-pizza-that's-not-actually-pizza-but-tastes-like-pizza-with-veggies? Look no further. A simple 10-minute recipe with minimal ingredients, perfect for a summer cookout or easy snack.

This week's recipe doesn't come from me but from a member. She's a working mom with two kids under the age of 5. Also has a full-time job; bartends at least 5 times per week. This doesn't give her much time to prepare meals however, this meal works. When chatting with her, she had started that this little snack is super simple to make and tastes really good.

After explaining to me the ingredients, I was curious to know the recipe! A couple of hours later, she sent me the recipe via FB and now, I'm sharing it with you. Guilt-free pizza, at your service!

Zucchini Pizza Bites

Ingredients

  • TOMATO SAUCE: Store-bought low carb pizza sauce or a tomato sauce makes this extra quick. LEFTOVER MEAT SAUCE is another great option!
  • TOPPINGS: Possibilities for zucchini bite pizza slice toppings are endless. We love pepperoni, crumbled bacon, or sausage. Top with your favorite low carb veggies.
  • CHEESE: Mozzarella is the standard go-to when it comes to pizza because of its creamy, mild flavor and its ability to hold everything together. Zucchini bites can be made with any cheese!

Just add just a few flourishes of basil or red pepper flakes, or a sprinkle of crumbled feta cheese and any crowd will come back for more!

Instructions

  • Preheat oven to 450°F. Line a baking pan with foil and set aside.
  • Slice Zucchini 1/4" thick and arrange on a prepared baking sheet.
  • Top zucchini slices with pizza sauce, oregano, cheese, and your favorite pizza toppings.
  • Bake 5 min or until zucchini is tender. Broil 5 min or until cheese is bubbly and melted.

To Make Ahead

Place ingredients on zucchini then put in a pan. Place in the fridge until ready to be cooked and eaten.
