Rhubarb Torte

Rhubarb tortes are bars with a shortbread crust and chewy, tangy, rhubarb filling. Perfect summer dessert.

 

A summer staple from the kitchen of Momma Wait. Every summer since I can remember, my mother has made these bars. There are simple to make and require few ingredients; most you probably have laying around your kitchen.

Rhubarb, once planted, sprouts a lot of rhubarb. One bush can stretch over 2 feet, or at least does in my mom's garden. This makes for an overwhelming sense of dread if you don't know how to use it. But, this recipe will provide you with a simple way to dwindle your pile.

Ingredients

Crust

  • 1 cup flour
  • 5 tbsp powdered sugar
  • 6 inches of butter

Topping

  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 3/4 tsp baking powder
  • t/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 2 cup chopped rhubarb

Instructions

  1. Preheat oven to 350 degrees
  2. Mix crust ingredients together and press in greased 9 x 13" pan
  3. Bake crust at 350 degrees for 12 minutes
  4. Mix together topping ingredients in another bowl
  5. Pour toppings ingredients on baked crust after 12 minutes
  6. Bake everything for 35 to 40 minutes at 350 degrees

Give this recipe a go. It's one of my favorites. Chewy, tangy, soft, and simple to make. What more could you ask for?
